Yellow Squash Casserole

INGREDIENTS :

4 cups sliced yellow squash
½ cup chopped onion
35 round crackers buttery round crackers, crushed
1 cup shredded Cheddar cheese
2 large eggs beaten
¾ cup milk
¼ cup butter, melted
1 teaspoon salt
ground black pepper to taste
2 tablespoons butter

INSTRUCTIONS :

Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Step 2: Place a large skillet on the stove and turn the heat to medium.

Step 3: Pour in a little water and add in the onion and squash.

Step 4: Cover the skillet and bring to a boil. Cook for 5 minutes or until the squash is soft and tender.

Step 5: Remove from the heat and drain the water. Place the cooked squash and onion ina large mixing bowl.

Step 6: In a medium mixing bowl, add in the cheese and cracker crumbs. Stir until well mixed. Transfer half of the mixture into the bowl with the squash and onion.

Step 7: In a small mixing bowl, add in milk and eggs. Whisk until well mixed then transfer the mixture into the squash mixture.

Step 8: Add 1/4 cup of melted butter. Season with salt and pepper to taste. Stir until well mixed.

Step 9: Transfer and spread the mixture into a prepared 9×13-inch baking dish.

Step 10: Sprinkle the rest of the cracker mixture on top and add 2 dots of butter.

Step 11: Place inside the preheated oven and bake for 25 minutes or until the colour turns light brown.

Step 12: Remove from the oven and let it sit at room temperature.

Step 13: Serve and enjoy!
