INGREDIENTS :
Large seedless watermelon cut into 1-inch cubes
(2) eaches cucumbers, thinly sliced
(12 )leaves fresh mint, thinly sliced
¼ cup olive oil
2 tbsp apple cider vinegar
(1) pinch coarse salt and ground black pepper
1 cup crumbled feta cheese
INSTRUCTIONS :
In a large bowl, gently mix watermelon, cucumbers, and mint. Whisk olive oil, vinegar, salt, and pepper together in a small bowl. Add and drizzle it over the salad and gently toss to coat. Add feta cheese and gently mix.
Note:
And as a heads up, buying the pre-crumbled feta can be tempting, as it’s easier to get and ready to just pour into a salad. The feta blocks are much more flavourful, however, even though they take a touch of more effort to crumble before adding to the platter. Each sort of cucumber is perfect with this watermelon cucumber salad, as long as you extract the seeds before slicing.
