An easy-to-make casserole that all the family will enjoy. Warming and comforting, it’s one of my regular winter suppers. The quantities listed here are for 2, but can easily be increased for a larger number of people.
Ingredients
2 cups cooked chicken breast cut into chunks
8 cups shredded frozen hash brown potatoes
1/2 cup reduced fat Honey Mustard Dressing
1/4 cup reduced fat sour cream
1/2 cup crumbled bacon bits
1 1/4 cups reduced fat shredded mozzarella cheese, divided
1 tsp. salt
1 tsp. garlic powder
sliced green onions for garnish, optional
In a large bowl combine all ingredients and half of the mozzarella cheese. Spread mixture into a lightly greased 13×9 casserole dish.
Cook uncovered at 400 for 35 minutes. Remove casserole and top with remaining mozzarella cheese. Return to oven for another 10 minutes or until cheese is lightly browned and melted. Top with green onions if desired. Enjoy!
